Every February a very well-known California brewery releases a famous Triple IPA, and that has inspired us to release our first crack at a triple West Coast IPA! The base of this beer was designed to really highlight the hops, so we brewed with a base of Pilsner malt and then hopped with Mosaic and Citra Incognito in the whirlpool. Fermented with a very expressive Thiol boosting yeast from Omega, and dry hopped to the max with 6lbs per barrel of Phantasm, Nelson Sauvin, NZ Cascade, and Simcoe. This Triple IPA is absolutely seeping with sticky resinous mango, fresh guava, overripe papaya, and lingering notes of dank herbs.
